Good quality salmon is an excellent source of omega oils, while coconut oil is one of natures richest sources of medium-chain fatty acids that boost metabolism, and help your body burn fat rather than storing it. Coconut oil doesn't change its chemical composition at high temperatures, so is perfect for cooking, and tastes delicious. This Coconut Salmon is perfect for a mid-week super lean, and deliciously clean gorgeous skin dish.
Heat a tablespoon of Know-it-oil in a frying pan until very hot, then 'flash-fry' the salmon until it changes colour. Cook the greens in a large pan of boiling water for 3 minutes until cooked but still crunchy. Serve with brown rice and a scattering of fresh thyme. Enjoy!
